Three of the healthiest dark green vegetables are broccoli, kale and spinach. Identified by their dark green color, these vegetables are rich in antioxidants and they have large amounts of phytochemical like Vitamin C.
Broccoli has a number of nutritional elements. It’s important to note that broccoli is best when it is eaten raw, because the cooking process destroys some of its antioxidants. Broccoli is a great source of fiber. It has twice the vitamin C of an orange, almost as much calcium as whole milk (with a better rate of absorption), and contains anti-cancer and anti-viral properties with its selenium content. Broccoli helps restore sun-damaged skin, reduces the risk of heart disease, and boosts the immune system.
Kale is a slightly bitter, leafy green with a huge amount of folic acid and potassium. The folic acid found in kale is a great addition to your diet if you suffer from poor hair, skin and nails. Also the potassium helps to promote the breakdown of lactic acid in muscles after a workout, and is a great food to help prevent muscle soreness in the recovery process. It contains Vitamin A, B, and C, protein, fiber (helps manage blood sugar).
Spinach is considered to be one of the healthiest foods on earth. It contains Vitamin A and C, iron, minerals manganese, zinc, and selenium. All these nutrients make spinach useful in protecting various systems and functions within the body, everything from digestive health to eyesight. The use of spinach decreases the risk of many diseases, including cancer, heart disease, diabetes, neurodegenerative diseases, and obesity.
